Draught beer is not pasteurized, and therefore must be kept cold and served fresh. Most experts agree that fresh beer tastes better. Pasteurization protects beer in bottles and cans, in case they sit on the shelf for a while.

When properly poured with a good head of foam (about 1" is optimal), the natural carbonation released in the pour allows the aroma to escape, enhancing the enjoyment of the beer.

The natural carbonation in beer drawn from the tap also makes the beer less filling and therefore more drinkable.

There are many factors that can enhance your enjoyment of draught beer. At Anheuser-Busch, we go to great lengths to help our retailers understand how proper handling and serving techniques can enhance drinking enjoyment.
The beer must be kept fresh (kegs properly rotated) and cold (36º-38º F).
The beer must be poured properly with that appealing head of foam.
The waitstaff should serve your draught in a beer-clean glass, at the proper temperature, for peak taste and drinking enjoyment.
When all of the proper steps are followed, the result is draught beer at its best.

When beer is served too cold, it loses flavor and aroma. Served too warm, beer can be cloudy or even turn a bit sour.

If your glass is "beer clean," you'll notice the absence of large bubbles in an attractive head that won't disappear too quickly. As you drink, each sip will leave behind what brewers call "Brussel’s lace," the foam that adheres to the inside of your glass in parallel rings, forming a unique lacing pattern.

We haven’t even mentioned the social aspects of draught beer. There’s nothing better than a pitcher shared with friends to turn a night out into a party.
